A secret recipe revealed: OneThird's Trade Show Guacamole

Being on the road with OneThird is always great fun, especially on trade shows. Meeting customers, existing and new, and learning about their business and motivation to combat food waste is always very inspiring. But to be honest, there is always that one specific perk, the REAL reason why I like to be out there. And that is… Guacamole! OneThird has recently commercialised its Avocado Ripeness Checker, as presented on CES 2023.

 

The Avocado Ripeness Checker comes in two versions and allows for parties operating across the supply chain to assess the quality of avocados. They can help in:

 

  • outgoing quality checks for growers
  • determining the right ripening recipe and managing the ripening process
  • guiding consumers in the retail store which avocado to buy — and prevent the ubiquitous (but heart breaking) squeezing of these ghosts of evolution.

 

To demonstrate this, we need a supply of avocados of mixed ripeness, in order to show its full potential. And for multi-day exhibitions, the avocados ripen during the show. Meaning that we have to replenish the avocados (on the firm side), and rid ourselves of the ones that are about to turn overripe. Since we live up to our own mission, which is to reduce food waste, there’s only one solution for those soft-ripe, turning-inedible-in-an-hour-or-so avocados: squash them into a delicious guacamole! Because I love cooking (almost) as much as talking, it means that a couple times per trade show, I lock myself in the kitchen of our rented apartment.

 

Preparation note: this is a list of ingredients for a fully loaded guacamole, I’m not holding back. Quantities are up to you, make sure you taste frequently and plentiful while preparing.

 

Use it to your advantage, and only complain about the final ingredient until you’ve tried it out (it's all about texture)!

 

  • avocados with a ripeness index between 30-50, squashed (not blended)
  • cilantro
  • capers
  • cherry tomatoes, finely chopped
  • red onion or shallot, very finely chopped
  • olives, chopped (I prefer black)
  • fresh lime juice (plenty)
  • fresh garlic, very finely chopped
  • a pepper (jalapeño, chili or even habanero), very finely chopped
  • salt, to taste

 

and then the final, magical ingredient (ducks away):

 

  • a good clot of (vegan) mayonnaise!
